I was once told that there's no word in Irish to translate "sober" - at least, not for the meaning of it here! Apparently, "stuama" describes a person who is solemn, humourless etc - such a person could be called a "brogús" or a "turaire". But "stuama" is probably the best option in Irish anyway, or else maybe "tirim" (dry).

To translate it directly, I'd say "Stuama d'inniu amháin / Tirim d'inniu amháin" - Sober today only, ie just for today.

There's another way which might be closer to what you want: "Stuama/Tirim don lá atá ann inniu." - Sober just for the day that's in it.
