Lentil cottage pie with lightly steamed broccoli. Warming and filling.

Mushroom burger with caramelised red onion and cheesy chunky chips.

    cQlaWbV.jpg

Large flat mushroom fried with a little balsamic then grilled for the final 5 minutes. Added to fresh bap (from Bread Naturally in Raheny) with layer of caramelised red onion, feta cheese, tomato, and soft lettuce. Literally my favourite burger ever, and I'm not even a vegetarian.

Chips are potatoes cut to chunky size, baked with a little rosemary and then grated parmesan cheese melted over the top.

Served with remainder of the onion and feta and cherry tomato salad. So good!

A perfect day for a big hearty bowl of Goulash.

Made a quick, lazy but tasty small dinner.

Grilled chorizo and halloumi together and broccoli and brussel sprouts with parmesan.

Chicken fajitas & wedges. A little bit of Tex-Mex warmth on a cold & rainy evening.

An experimental dinner tonight. Bought some lamb in Aldi recently, and only really paid attention to the label when I took it back out of the freezer. Turns out it was breast, and needed long, slow roasting. So I did that today, and I tried my hand at colcannon. As soon as I smelt the kale cooking down, I knew it wasn't going to be my thing :(.

The lamb breast was alright. It was far, far too fatty for my tastes, and I wouldn't buy it ever again tbh. The colcannon tasted fine - even nice - but it just wasn't for me. The star of a poor dinner was a decent gravy. Enough of it poured over the colcannon masked the kale taste :pac:.

On the other hand, we had fabulous venison steaks from Aldi on Sunday night, served with dauphoise poatoes, roast carrots and green beans. Highly recommended!

Must look out for that, I quite like it actually ... always had it rolled and stuffed as a child back in the dark ages.

Came home from work and the kitchen was so cold that the chicken I'd left out to defrost was still frozen.

So we had egg and home made chips - himself had an omelette and I had fried eggs. A slice of bread and butter, loads of salt and vinegar, absolutely smashing. :)

We like it too. Stuffed with sage, onion and apricot, and cooked to death (150C fan for 2-1/2 to 3 hours) until all the chewiness has gone. The overspill stuffing during the cooking is cook's perk :)

We tried making St Menehould lamb breast once, but it was a lot of pfaff and we weren't that impressed.

Never heard of that, so Google'd it, and I agree it looks as if the pfaff to satisfaction ration would be very high!

Made a Jamie Oliver tofu burger last night (and yes I realise this is my second burger post in a row!), was pretty good! Messy enough preparing the burgers as you have to drain the tofu then mix it with breadcrumbs, egg, and marmite; but it ended up being very tasty, with a homemade salsa and topped with gherkins.

Seriously lads I need to set up that account to post images directly. That said tonight I tried a dish I've had many times abroad and one of my personal faves!

Jamaican Curry Chicken! I didn't manage the rice and peas boiled in coconut milk, but next time with images, I promise. So yummy.

Yesterday was nut and bean roast, roast potatoes, peas and gravy. I'm very happy with the nut roast recipe I tried, it's the first one I really like.

    Today - pizzas!

How much do the Aldi sweet potato fries cost? I've been buying the supervalu ones on occasion but they're very expensive

Didn't know Aldi does sweet potato fries until I read your post, so I went to get them today. :) Thanks G!

With them, I had roasted green chicken adapted from Nom Nom Paleo's recipe, with a few tweaks. Oh man alive.

Thai style prawn, chilli and lemongrass fish cakes.

Served with a salad that consisted of mixed leaves, rocket, radishes, cucumber, scallions and a boiled egg.

I tossed the salad in some chilli/lime dressing I bought from Johnstown garden centre in Naas (delicious)

I had this dinner in my brain for a few weeks now, but only got around to making this evening.

It was bloody delicious. I'll make it again. :D

It was so handy to make I didn't expect much of it, more of an experiment.

    Aldi Puff Pastry
    Left over roast chicken
Mushrooms - that I cooked and forgot to add in!!!
    1 x fried onion
    Half a fried yellow pepper
Tim of Erin condensed cream of chicken soup.

    Served with mashed potatoes.

Sooooo tasty I even impressed myself!

Last night I'd homemade burgers, mushrooms, onions, beans, gravy and mashed potato.
The mushrooms were the ones I forgot to use in the pie!

Tonight I'm doing Ham and Cabbage, boiled spuds skin on.
    - and brown sauce of course!

Meatballs (beef & pork) in courgette, tomato & chilli sauce with wet polenta.

The polenta was a first for the Billy household. It was eaten, but I doubt if I'll be asked to do it again.

Did you make the polenta with stock?

A delicate chicken stock. It was the consistency that they weren't keen on. I loved it.

Spaghetti Amatriciana from The Silver Spoon cookbook. Onion, pancetta, peeled and seeded tomatoes and chilli with pasta. So simple, so tasty.

No pic so here's one from the cookbook!

Boiled bacon loin, lovely fresh winter cabbage (cooked in bacon water), some of Lidl's baby roosters boiled in their skins (from their specials this/last week) and home made parsely sauce. Delicious Sunday dinner :D

Indulged in a bit of early Christmas shopping yesterday.

Dinner for me was chicken and mushroom soup, with a freshly baked baguette for starter.

"Wing sauce pizza" with hand cut chips for the main event.

Toblerone cheesecake, and a cup of freshly brewed coffee to finish.

Courtesy of Luigi Malones in Templebar. It was good dam delicious. :D

We went Lidl route also & had kangaroo & ostrich steaks with roast spuds, tenderstem broccoli & green beans. Mrs B & The Kids would definitely have the ostrich again, but would skippy the kangaroo in future.

Haven't eaten the kangaroo as steaks, but it makes a decent curry.

I made dhal last night for the first time and it was quite yummy, using Jamie Oliver's recipe. Though I don't know what to serve it with so just had a big bowl like porridge haha. One thing however, when I was pouring the lentils in there was this brown nugget (heh) in there, about the size of a malteser, dry and powdery/crumbly.. I take it these aren't normally in there? I eat the dhal anyways but was curious as to what it was
