Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

I normally like your posts Oblomov, but that looks like a food snail with digestive issues.

    ROFL

Visually, the streaks of colour, literally, drag the eyes along the array of colour to the main attraction, The roundel of squid and ham acts almost as the bulls eye, the centre of the dish.

Squid, Iberico pork, mushrooms, squid ink and pepper. Soft and tender squid with an Iberico pork, mushroom, courgette, spring onion and garlic filling. The squid was delicious but it dominated the delicate flavour of the pork. Also on the plate were four smears of smooth squid ink and red, green and yellow pepper purees. A beautifully presented and vibrant dish that overall however lacked depth of flavour.

Personally I think the big colourful streaks totally drag the eye away from the bullseye. Might have been delicious but not a triumph of presentation IMO.

The natural reaction follows how the eye is trained to read, from left to right... Reading english..

The curve and symmetrical large to small rainbow effect along and towards the curvature of the squid. The use of two primary colour then using the black and yellow to encase. The black and yellow are considered the two least compatible colours and create the border to enhance the centre pair.

The easiest way is to to allow the eye to follow the curve... without any predetermined conditions.

My problem wouldn't be the aesthetic. It would be there's not enough actual meal content to enjoy the sauce smears, assuming they taste different. Even if they didn't, there's still more smear than content.

  • Registered Users, Registered Users 2 Posts: 14,526 ✭✭✭✭Darkglasses

English or Hebrew reading direction, I don't find that great presentation at all myself. I'm sure it was part of a delicious meal, but I think that's a poorly presented plate. The garnish is imbalanced and outweighs the main event, and the green leaf on top is depressing.

  • Registered Users, Registered Users 2 Posts: 9,672 ✭✭✭Oblomov

The squid and ham, is complemented by the garnish, the red, green and yellow peppers, then add the garlic, the squid's ink.... the idea is not to take one or two large portions but bite sizes to enable the balance of meat and garnish/sauce are equal

And, remembering that it's part of a seven course taster menu at the manderin Oriental.

The sequence of dishes and flavours are intended to trogress thru a variety , each individual but complementing the following dish.

The combination and composition could easily be seen as the roundel and the sauce tracings, being the flavours bursting from the circular heart of the dish back to the bull's eye centre.

I like how the tastefully cut banana draws ones eye to the icecream which itself looks to have been served in a rustic way but if you know anything about food presentation, like me, then you can appreciate the craftsmanship that went into serving it like that. Sheer genius.

I like how the ice cream made my face orgasm and that you can get silly sized portions.
But I'm probably weird in that I focus on taste rather than how it looks. :P

I've been in Tokyo the last week. It makes me sad that I can buy food here in a 7/11 that's better than what I can get in some restaurants in Brisbane...

Anyway, here, have a pic of some noodles. They were delish.

Award-winning chef & food writer J. Kenji López-Alt has a YouTube channel, where he mixes "proper" cooking videos with GoPro-on-the-Head stuff like this:

Death has this much to be said for it:
You don’t have to get out of bed for it.
    Wherever you happen to be
    They bring it to you—free.
