ii) I don't buy the argument about discovery being able to take two torpedo hits. Look at how many 24th century ships went down in one or two shots in the dominion war. Hell even the defiant struggled with a quantum equipped excelsior class vessel.
Not to defend STD but the minimum yield for a photon/quantum torpedo is roughly the same energy as 5 tonnes of TNT. It sounds like a lot but starships are pretty tough.

The weird thing is this is also the minimum for a photon grenade which is just a tad extreme.

Ships with their shields up and running can deflect a few photon torpedo blasts before shields start to fail.

Without shields, a single photon torpedo would destroy most ships. Those ships seen in the Dominion war probably already had their shields weakened from battle.

    Depends on the yield.

Can also depend on where you hit.
Go for the warp-core or antimatter containment units, and the whole ship will go up.

Hitting the bridge or a major EPS trunk will just rip the ship apart and will fling wall-boulders at any member of crew near a console :P
