I will have a loan of a garmin 810 this weekend and will be using it for navigation. I am unsure if I should use a TCX or a GPX file. Any advice or experiences would be greatly appreciated.

Depends on the source of your data, I usually use GPX for my bike routes as it is the free option on MapMyRide. Works fine until you go off road, at which stage it has a knicker fit and tries to tell you to go back the way you came. For this reason, I usually just follow the drawn line of the trail on the map screen and don't bother with the turn by turn navigation. The turn by turn stuff can be useful if you get lost and you don't have a defined route.

Based on strava's export route function:
"Exporting a Route to GPS Device

The Garmin Edge 800/810/1000 will accept either TCX or GPX files.

GPX files are best if you have base maps installed because it will display both a styled map and text-based directions.

TCX files are best when you don't have base maps installed."

I will be using ride with gps to plot the route, all on road. Does GPX give turn by turn instructions?

It does but it can be a bit 'hit and miss' especially in built up areas. I plotted a route through Cork city last year and it was bringing me on one way streets, pedestrian streets, telling me to turn where there was no turn etc. I got totally lost (as I don't know Cork at all).

Yes, if you set it up correctly, more detailed discussion here.
