Cover Letter Help

I've decided to make a career change and am preparing a cover letter for a company which I would like to be a part of. The thing is that they are not currently looking for any staff but I want to call in with my CV and a cover letter and hopefully have a chat with someone while I'm there.

However, I really need help with the cover letter. It's been years since I've had to write one and I'm not sure of what I should say or how I should say it. The one I used to get my last job isn't much use as it opens with this:
I am writing with reference to the above role in your firm currently advertised on *website*.

Obviously I can't use the above as the job is not being advertised.

Basically I just want to say that I want to take my career in a different direction and their company is the one I would really like to work with. Can anyone advise on how I should phrase that in the cover letter?

    Any help/advice appreciated.

Here's a mock of something similar I was sending to potential employers, room to improved and edited but it gives the jist. I received a lot of responses with this type of letter.
    Dear Sir/Madam,

My name is ______ and I am writing to apply for a role in your company, although I realize there are currently no positions being advertised I would like to put myself forward as a possible candidate for [insert role you would like].

I am extremely interested in a role within [insert company] as working in my previous position I truly found my passion for [what ever your doing/want to do] and a role like this would be an amazing opportunity, and I would love to grab it with both hands.

I believe my previous work experience matched with my [a quality related to the job] attitude would prove to be a recipe for success. As you will read in my CV I have a very high standard of [insert related experience] and I would love a chance to prove myself in a new environment. Especially one as prestigious as [company name]

If there is anything I can do to help further my application please don't hesitate to contact me any time and I would be delighted to chat.

Thank you in advance for your consideration.

    Warm regards,
    ______
