There isn't enough space to do the windows automatic updates....

Any idea what I should do?

Purchase a larger SSD off amazon and ghost it to that?

My sister got it for my mum, so I don't really want to spend anything on it myself.

Is 30GB considered alright for a new laptop these days?

Sounds like it is a chrome notebook intended to have its storage in cloud

Do you have the exact make / model?

30GB isn't great if you want to store media files locally (movies / music).

I can't see how it's failing on automatic updates. Maybe it needs ~4 to 6 GB's free for the Windows 10 installation? As that downloads in the background regardless of ignoring the prompts.

Seems thats it .. more storage can be got for it but is an extra..
This is from its specs page...

The internal storage on our review model was 32GB of eMMC flash, with just 12.1GB free right out of the box. There are hard disk-based storage options ranging from 500GB to 1TB, but you'll pay more for these. Our review unit ran Windows 8.1, and by the time you've upgraded to Windows 10 the storage available will be different -- but not radically so. You'll need 3GB free to download the upgrade file, so bear that in mind.

After only running windows updates, there is now only 8GB free, and the latest window update window says it needs 12.2GB free.....

That doesn't sound right! Does that include Windows 10? You should be able to deselect it.

But, as the article linked above mentions, the operating system will take a fair bit of the Hard Drive so that means you're working with about 10 to 12 GB of free space.

I'm gonna tell her to get it changed - what should I tell her to get instead?
