Don't really know my cheeses. Usually just use red cheddar in an omelette. Any recommendations for some other cheese to use?

    Thanks

Very strong mature white cheddar. I like the kick!

There really is no definitive "best" cheese for an omelette, it really depends on what you want it to do (melt, ooze, brown, etc), what other ingredients you're using and, of course, what you like.
