What is the symbolism? Seems sinister but would like other opinions
    opinions?

No Christian symbolism that anyone is aware of. Try the Pagan forum perhaps ?
Perhaps someone thought they owed the deceased €2
Perhaps it's just a bored kid with chewing gum ? Who knows.

Most likely some kind of private joke from the family of deceased?

Similar to putting a bottle of whiskey or pack of fags in the coffin?

Sure didn't the Lord himself have a two euro coin stuck to the rock that sealed his tomb.
