    Bowl of heated Flahavans porridge made with water, topped with chai seeds, sunflower seeds, banana, strawberries, blueberries dates and a spoon of natural yogurt and a cup of hot water with half a lemon squeezed in, great way to start the day, delicious, keeps me full til lunch

    Porridge made with water with 30g mix of dried apricots, cranberries and raising.

    Usually does me grand, but I'm fit to eat lumps off the desk now.

    I fried some sliced mushrooms and courgette in oil and butter with loads of black pepper, then put it in a bowl and mixed with cream cheese, grated cheddar and chopped basil. I used this as a filling for a 2 egg omelette. OH MY GOD SO GOOD. Really rich and creamy and filling.

    Tesco crunchy meusli, with added oats and a banana with a quartered (more like 16thed) pear.
    In the summer months will be supplemented with Lidl's brioche and several mugs of tae...

    I made a loaf of chocolate chip banana bread earlier this week that is insanely sweet and, I guess, because of that is holding up really well. Won't be using that particular recipe again but it did grant me the gift of warm Bank Holiday Monday morning banana bread spread with cream cheese, a little drizzle of agave nectar and a sprinkle of cinnamon. And a nice coffee cos I finally dug my espresso machine out of my mam's attic where it's been sitting in state since I moved house 9 months ago and temporarily didn't have space for it.

    Brekkie today was two thinly sliced rashers of smoked bacon, two fried eggs, two potato waffles and some brown soda bread with butter and jam, and a mug of tea the size of my head.

    Made the cooking club's vegan breakkie banana bread by Elbow. Wholesome goodness and so tasty. Slabbed with hazelnut butter.

    Trying to clear out the fridge. Chopped up sausage, peppers, tomatoes with some pickled cabbage in an omelette.

    I've lost my knack with omelettes recently, do you use a very hot pan? Y'know, to get it to not stick?

    Not really hot (4 out of 6 on the hob).

    I'll try and describe how I make mine....

    Stick some butter in a small frying pan and when it starts to bubble, add the beaten eggs (2 or 3).

    When the edges start to harden, start at the top and pull the edge towards the centre so the runny egg on top flows into the space left. Move around the pan, pulling in the edges and allowing the runny egg to fill the gap until all the runny egg on top is gone.

    Add whatever filling you want and transfer to a plate, folding the omelette on top of the filling so it's sandwiched.

    I put a little salt, pepper and milk into my eggs before beating, of course cream in there in place of milk is yum.

    Oops, forgot to mention seasoning! :rolleyes:

    I've never added milk or cream though......

    I've such a craving for an omelette now. I've 1 lonely egg in the house. I suppose a 1 egg omelette wouldn't be too substantial would it?

    Pulled pork pancake with pickled cabbage and maple syrup. Should have done a poached egg to balance it out but hunger beckoned.
