    Right, I'm away and breakfasts consists of this most days...

    sliced onions with lettuce and tomatoes with a sesame sauce, fresh oranges (cos I had a terrible cold) and some home made yoghurt with fresh fruit cubes, including (Lidl) pears, apples, pineapple, strawberries and mango.

    then freshly ground coffee.

    The yoghurt is a home made concoction. It reminds me of Dr. Who's tardis as the same jam jar feeds us all every day. Then it's left in a sunny or warm spot and the next day it regenerates itself. It's got yeast in it, they say...

    Oh yeah, and on the first morning we had this Sakura cake. it was delicious. It was small (so I included my finger in the photo) but it was the last slices so we got half each.

    I had the house to myself this morning so I got creative with some French toast. I added some vanilla extract and orange zest to the mix. The zest made it. A teensy burn on one end but sure it added to the texture :v

    Topped it was some cinnamon and honey and I was in business. Mmmmm. :)

    Just had a thought though, what would the rest of you do with the last dregs of eggy mixture after you put the bread in the pan? Would you add it to the pan or just dump it?

    OH it must be added to the pan, its the french toast law, leftovers into the pan with last slice!!

    This morning's effort,

    yoghurt in a small glass with fruit. Two blueberries and a raisin or two.

    followed by a fry. A couple of rashers and some sliced ham. Omellete out of shot to the right.

    Finished with a coffee and this butter square pan. It's not cut all the way to the bottom so looked cool.

    And a small bowl of tomato soup with a hint of minestrone thrown in...

    Yeah I'd just pour it over the bread once I've put it on the pan! Eggstra eggy goodness! :)

    Fluffy buttermilk pancakes (toasted from the freezer) with leftover lemon tart filling blobbed on top (the remaining filling was cooked outside the tart until custardy)

    Slice of cheese & a handful of almonds. Supposed to be lemon yoghurt & oats but my 'aldi deluxe' lemon curd yoghurt looks greenish and smells not great compared to the bucket of loveliness that was Killowen last week. Morning appetite is a fickle, fickle thing.

    Hard boiled egg with Frank's RedHot sauce, one slice of wholemeal toast, small glass of pineapple juice, cup of tea and a nectarine.
    Sounds boring but as I'm not usually a breakfast eater, I actually enjoyed it :)

    I made pineapple, mango and rum jam yesterday, so breakfast was some of that on toast.

    It turned out rather nice indeed :)

    Stale waffle (waffle iron rather than birdseyepotatowaaaafflestheyrewafflyversatile) in the car on the way for it to fail its NCT. Bad car. Suprisingly nice stale waffle though. Cardamon & vanilla in it.

    Cup of hot water with lime, bowl of chopped up apple, walnuts, oats, dried cranberries and natural yoghurt - yum (then round to friend's house for strong coffee and gingerbread for the second course!)

    Woke up to serious hunger this morning. Someone here posted mushroom steak sometime last week. Thought I'd give it a try. Love my mushrooms!
    Portobello mushroom steak, egg fried sunny side up, mixed salad with basil and feta.

    I had a wrap with a strange combination of scrambled eggs (made with coconut oil), grated mozzarella, some sliced Jalepenos, and (randomly) a squirt of steak house marinade that I found in the fridge. Didn't bother taking any photo as it didn't look anything special, but it tasted AMAZING! Maybe it was the coconut oil in the eggs that made the difference.

    (By the way, I don't think I'll ever go back to using any other oil now that I've started cooking with coconut oil. Would definitely recommend it - it makes everything taste better, it's healthier, it makes washing up much easier, and it's great as a moisturiser too! And for those who - like me - don't like the taste of coconut - I don't find that I can taste it at all in the food.)

    Most regular posters on the Nutrition and Diet forum would agree that saturated fat is in fact good for you. Obviously everything in moderation! I think monounsaturated is the one you have to avoid. If you do a search in that forum there's loads of info (would post links but I'm on my phone!) :)
