When you say internal do you mean the inside of external walls or internal walls?
Can you describe the construction in some detail please:
What materials are used, including any renders on outside and inside.
What is used to bind the solid items in the walls
What age is cottage?
Does it have a DPC?
What material are the floors?

the inside of external walls.
house is between 80-100 years old not 100% what exactly walls are made up of just now they are stone and bout 500mm thick(only looking at buying at min had survey done today but haven't received report yet)
outside walls are uncovered stone no plaster on front/rear of house and gable walls are plaster with sand and cement.
inside wall are wallpapered but near sure it plasterboard and plaster on them!
no dpc so surveyor said today, floors is wooden and cover with ply at some stage

Okay,
my guess is that floors are clay under the floor boards.

Further guess is that you need to be thinking about lime and alike renders and if there is plaster board and gypsum skim on it will need to come off.

If you proceed , search here for stuff on lime renders

Its all doable to get it habitable in a correct way but its not straightforward so depends on you wallet and appetite for the effort.

The other thing you need to consider is breath ability of the stone walls in the cottage-if you use the wrong type of insulation it could cause problems for the mortar holding the stone in place.
