    I love those kind of butchers. Normally if you get on first name basis they will tell you what is overstocked/can be got cheaper etc.

    Flat iron steak....meh, not huge on. Really has to be treated one way with the pan!

    He's like that tbh, even not being on a first name basis, I remember one of the first times I went in, I was looking for chicken livers, and he was agog to know what I was using them for :) He seems to be really into his food.Flash fried flatiron? That was what the butcher said a chef recommeded, I think I'd be treating it a bit like bavette/flank?

    My beef pho has lost it's rank green colour (think it was the marrow being sucked out), and is now turning a pleasant brown colour, and omg the smell is just divine :) Have it in the slow cooker, if it works out I'll post the recipe, no nasty scum stuff so far, after the initial parboiling (my god the stuff that came out of it was foul)

    Hi,

    I was wondering if there are any professional chefs that frequent the cooking boards here. The reason I ask is that I am looking for some advice regarding a small business idea I have selling chicken wings. I have identified several sauces I want to use and already have a big customer base but I am unsure how to get started.I have the use of a kitchen in a bar for prepping and cooking. I am interested in things such as taking a basic sauce recipe and scaling it up to feed multiples. Is there a specific way to calculate times, ingredients etc? Also what is the best process from cooking to serving that is hassle free and quick?

    I am sure I have other questions but I want to start with these for now so if anyone here works in a commercial kitchen and can offer some advice I would be eternally grateful!!

    Sounds like a cool idea, these guys were down at EP over the weekend, seemed popular, may be worth checking them out!

    For me, wings have to be fried. A bit of experimentation is required on this though.

    The first sauce you'd have to get done is a popular buffallo sauce. Vinegary hot sauce with butter. It's the first thing people will look for and make or break a place imo.

    Crackbird in dublin are also worth checking out for a bit of inspiration, their Habanero and honey wings are savage.

    From a professional point of view I'm not much help unfortunately, it's not really something I have experience with. But in general, sauces are pretty easy to scale up. Fry the wings, chuck them in a bowl, add a ladel of sauce and toss them. Pretty handy tbh.

    It always surprises me how difficult it is to get hold of venison, or any game here. I lived in Germany before and as soon as the season started it was all over the place. There was even a local restaurant that was only open during the game season and closed at other times. Considering the almost plague like numbers of deer here in Wicklow you'd imagine it'd be everywhere too, but apart from some expensive outlets like Donnybrook Fair it seems difficult to source unless you know someone who knows someone else whose friend's cousin is a hunter.

    Thanks for the reply!! I should have mentioned I am based in London but I had a look at that link and will get in contact with them. My mates were at the picnic this year and mentioned something on Fb about eating awesome wings there so I guess that may be the same people!!

    I actually noticed this myself last Christmas - the seller in question had bags of Oakland baby potatoes for 99c when they were something like 6c at Aldi. Thought it was a one-off. If he rubbed them in mud and put them in a bowl he'd probably have gotten away with it.

    I had flatiron on the early bird at Milesean in Castlegregory a few weeks ago. It was a tiny bit tough, but ridiculously tasty. Well worth trying.

    Quorn 'chicken' burgers taste like normal cheap chicken burgers if you're ever stuck for a lazy meal :) Quorn mini kievs taste like Satan's crotch.

    @ Faith,

    I was going through my Delia how to cook book last night (I got all three as a pressie one xmas) and there are a fair few main meal veggie recipes, I can have another trawl and post up the links for you if you'd like?

    That's me speaking as a meat lover, and genuinely thinking that I'd enjoy those meals
