What to plant between alder trees?

Evening all! We have planning permission and are hoping to start building in March 2015. The site is 1.6 acres and am currently planning the garden - oh the fun and games! There are alder trees at the back of the site which are a wind break for apple trees behind us. I'm trying to come up with ideas of what to plant…
