04 Fiat Scudo 1.9 Diesel Temp. Gauge fault

Wondering if anyone can help with this one, A friend has a 04 Scudo and when there driving the temp. gauge drops to zero and rises to normal temp. again and this keeps happening while driving. Anyone know what the problem might be? Cheers

Could be the thermostat, easy to swap out to test and not that expensive.
Could be a bad electrical connection to the temp sensor at the engine
