About 50 airlines operate from Dublin at peaks seasons. It is the 25th busiest airport in Europe according to wikipedia.

I think Air France Cargo operate a 747 once a week into Dublin but aside from that there is no 747. Next biggest would be a 777 or A340, not quite sure to be honest. Biggest issue for jumbo's would be the runway length. Its not long enough for fully loaded jumbo's to take off.
I also imagine there aren't many stands suited to accomodating A380's or 747s.

Aer lingus used to operate 747-100's back a good 20 or so years ago.
Last year China's vice president flew into Dublin in a 747-400 and back during the bad snows of 2010 Im pretty sure a few of Heathrow bound 747's diverted to Dublin.

Most of this is off the top of my head so people please correct me if Im wrong.

There is insufficient demand on any route from Dublin for a 747 (which the airport can handle) or a 380 (which it can't). Any route that has that level of passengers is incredibly frequency sensitive so has multiple smaller craft flights per day.

The airport is a hub for only one airline - Aer Lingus - feeding traffic to their TA routes by prop from regional airports and a small amount of cost-sensitive traffic from some European cities (I know people who have got AMS-DUB-BOS cheaper than AMS-BOS before for instance) so this explains the lack of demand.
