    I wonder how you'd make alioli - maybe roast the garlic first to make it milder? hmmm....

    You're lucky to be able to get fresh eggs like that. I have an "egg man" (who is doing very well out of my switch to paleo - now getting 2.5 dozen a week) who delivers eggs from his uncles farm. He's says they are free range, but I only have his word for it.

    Yeah, fresh eggs are amazing. But actually, I only get them like that every few weeks. Only when I or my sisters head down home to kikenny, they are able to get a few boxes for about €2 or less each so I always manage to stock up. I got a few today in a market for 2.50 so thats better than the usual 3/3.20 pricetag they sometimes have.

    Someday, I'll be surrounded by lovely chickens...some day!;)

    Day 22, not long till I can have my batter burger, chips and coke ;D

    I made Rogan Josh from Well Fed, together with her Cauliflower Pilaf. Absolutely yum! It was a bit of work, and had to simmer for 2 hours, but it was worth it.

    I had a bit of a blip this weekend when we were invited to a friend's after the rugby -- the food was generally Whole 30, but I had one glass of wine. It most definitely was a choice, but I was quite happy to really feel like one was enough. That's a rarity!

    Well we started on April 1st so it's not that hard to figure out :D

    I must try that recipe Sarh, mind you I'd be the only one eating it.

    I had lettuce fajita's tonight, I think they are way nicer than wraps.

    Made some ghee yesterday and I think salted butter is fine too (and is cheaper), here is an idea how: boil it first with water (about double of butter amount), stirring a lot so the salt dissolves in the water. Cool down without stirring and then put in the fridge so the butter solidifies at the top. Make two holes on opposite sides and drain off the salty/milky fluid. Now you have unsalted butter, which is almost ghee. Then proceed with regular recipe to make it perfect. :)

    I made mine with regular salted butter but didn't bother unsalting it.

    p.s anyone found a stock (other than home-made) that doesn't contain sugar? I was making bolegnase and I usually ad some beef stock but my Knorr stock pot contain sugar....

    One of the Kallo ones is sugar free but if memory serves it has potato starch or some other ****e in it.

    I found one in my health food shop but I can't remember the name... I'll go and see if I can find it.

    Thanks LT, I have some homemade chicken stock in the freezer but foolishly it's all in soup sized quantitys rather than recipe sized ifykwim.

    Going to use the poxy weather and my enforced rest day (my quads are foooked) to do some cooking - spaghetti squash breakfast bake :)

    Well I never thought I'd say this but... I ate liver! Chopped up into tiny cubes by the butcher. I added it at the end of cooking to a little left over chilli, fried with red onion, half a bucket of garlic, herbs and grated courgette! Not too bad actually. Took me back to my childhood days...didn't like it then but it's just so nutritious I'm going to make it a regular addition. Loads of iron, fat soluble vitamins A D E and K and folate and b vits. Amazing:)

    I'm going to boil some bacon later for dinner, should keep me going for the next few days:)

    Good woman Doolee, I was actually going to buy some pate the other day but then couldn't think of what I'd put it on!

    Its pretty nice on just carrot sticks or even a few roast veges.

    Or you could make some guacamole and crackers like me...:)

    Its most certainly a day to be spending in the kitchen when your off work!

    My chicken was delish! baked sweet potatoes around it which soaked up some of the spiced chicken juices. nyom nyom. <and I hid 2 portions in the fridge for my lunch tomorrow>

    The crackers and guacamole look great Doolee. You're right about it being the weather for cooking-I did the same this afternoon.

    DComdolly-you'll be looking forward to lunch tomorrow! Must try that recipe myself.

    My chicken curry was lovely. Had it with green beans and sugar snaps. Enough left for tomorrow for lunch too.

    I also made a Smoky Beef Casserole for the freezer as a handy standby and a pot of lamb meatballs for tomorrow. The beef dish didn't call for any stock in the recipe luckily. Lotwan, did you happen to remember the name of the one you got that was suitable? I have plenty of other recipes that need stock and am not as organised (yet!) as DComDolly with frozen stock at the ready.

    WOw summerdreamer you've been cooking up a storm!! I had a look at the kallo stock cubes in the health shop, I think the veg one was ok, can't rem I looked so many!
    I only have chicken stock made & frozen and it's positively stone age itself!!

    I've recently started a healthier lifestyle and I'm looking for good resources (such as blogs) for primal/paleo-esque recipes. Thanks to the last few pages of this thread (great resource btw!), I know of Nom Nom Paleo and the Clothes Make the Girl. Are there any others in your favourites folder you could share with a newb to both healthy eating and cooking in general??

    Oh, and something else I wanted to ask... is it possible to make cauliflower "rice" from frozen cauliflower? I've looked on the Google doo-hickey, with contradictiong results.

    Hi Apex, If you want to pm me your email I can export my paleo bookmark foder to a doc and fwd that to you - LOADS of reading material.

    Yes you can make cauli rice/mash from frozen cauli by just boiling it till soft aand then draining it well & throwing it food processor with evoo, ghee (or butter if you are not doing a W30) & seasoning. I put ina spooon of dijon mustard recently & it was v.good.

    The grating method would obviously only work with fresh cauliflower :D

    Have €10 of pork shoulder purchased for my pulled purk - perfect day (again!) for a cook up.
