this sounds weird but a peach and spinach frittata is a wonderful breakfast.
You'd need to cook it the night before while the oven is on - but its a great way to start the day with a good part of your 5 a day quota !

It starts with frying off garlic and onions which is how I start most dinners so just put extra in main meal and steal it before you put any other ingredients of your main dish in.

saute some garlic and onion( pref in butter ) - being careful not to use too much 1 clove and 1 medium onion is more than enough, add some spinach and a touch of nutmeg and some salt and pepper ( as ever ) -
cook just really till onions are translucent ( dont burn the garlic ( let it go brown ))
pour it all in an ovenproof dish - whack some chopped drained peaches on top together with 6 or more beaten eggs - stuff it in a medium oven and leave it for 40 mins odd and there you go.

It's very odd but superb and if you make it big enough you can keep it in the fridge for a few days ( mine never last ) - you can top it with cheese if you dare !

Shellfish in general do, I suppose.

It probably depends on how you define "a face" though.

"Did it have a hole at one end to take in nutrients and another hole at the other end to dispose of waste and some form of digestive system in between?" isn't quite so succinct and snappy :D

I am the aforementioned friend. I have just had the breakfast loaf for the 4th day in a row and it is still yummy :-) it doesn't look great but it is a lot like a pastryless quiche. The best thing about it is my 6 year old is eating it with me :-)

I think I might switch chorizo for the bacon for a change the next time. I have 4 days worth in the freezer so I don't have to make any more til Wednesday, for Thursday.

I am following a more hardcore paleo detoxish type plan and have lost 5.5lbs since Wednesday but to be honest most of that is the bloat and grot in my insides after horrific Christmas eating. Completely aside from that I am loving what I am eating and what my kids are eating by association.

We had fabulous slow cooker ribs last night with roasted peppers and onions :-)

I have hit a total of 10 fruit & veg for the last 3 days which I'm very happy about.

    Recipe for the ribs? please?

I bought a slow cooker and so far I made beef roast (left cooking too long, and too much water, wasnt great at all) and roasted Ham, which was OK.

Well done on your success, you're doing great! Is chorizo whole30 ok? isn't it full of other crap? My dunnes one I just used certainly wouldn't pass

Can I ask - are you freezing the breakfast loaf ? and do you microwave to re-heat?

eta - the soup, bloody delicous!

I have frozen the breakfast loaf for future use. I won't know til tomorrow how it survives the process but I know quiche can be frozen. Yes, I have just heated it in the microwave.

The chorizo is not whole30 but to be honest nor is my budget. It has dextrose & sodium nitrate & nitrate in it. I'm not going for Whole30 poster child nor am I going to run my bank account into the red for this so I have to pick my battles. It's also a hell of a lot less **** than I would be eating on WW.

The soup is indeed fab. I'm making it again at the moment.

    Slow cooker ribs

    Ingredients:
    1/2 teaspoon salt
    1/4 teaspoon pepper
3 lbs beef ribs or pork ribs
    2 tablespoons olive oil
    1/2 onion - sliced
    125mls beef stock
    1.5 tablespoons of vinegar
    1/2 teaspoon dijon
    1/2 teaspoon chili powder

Coat the ribs with salt and pepper, and in a large frying pan, heat the olive oil over medium heat. Brown ribs in olive oil.
In a slow-cooker combine the rest of the ingredients. Transfer the ribs to the slow-cooker.
Cover and cook on low for 6 to 8 hours.

I got my butcher to cut lengthways thought the ribs (cutting each rib in half) but next time I will get him to cut out every other bone leaving me with full rubs that have meat on both sides.

I look fwd to hearing how the loaf handled the freezer
That's cool re the chorizo, though I do think it's time those Nor Cals got some competition for poster girls :D
Dinner tonight is a piece of stuffed beef done in the slow cooker with the tomato sauce left over from last nights turkey meatballs.

    Tot for day 6 = 12 + 2 :)

Didn't really fancy a "proper" breakfast this morning so made this

Protein shake on skim milk with banana, spinach and spirulina.

Did your shake turn out nice?

What portions of ingredients did you use?

Tried spirilina before and it tasted awful! Well done so far Dotcom!

    200ml skim milk
    100g of frozen sliced banana
    1 scoop vanilla kinetica whey
    2 ice cubes
    Large handful baby spinach
    3g spoon spirulina

Really couldn't taste it at all.
It tasted the same as my usual vanilla & banana.

We had a yummy yummy yummy coconut milk curry tonight for dinner.

The kids are loving what we are eating & are keeping a record on the fridge of the fruit & veg eaten every day.

I don't have to cook now until dinner on Wednesday :-)

Hey just gonna jump on the bandwaggon with ya here dotcomdolly! TBH im not sure what ive been eating can be strictly seen as paleo. I've kept in quite a bit of dairy such as cottage cheese, full fat natural yoghurt etc. I think im following more of a primal diet than paleo, but tbh i find a lot of conflicting info on the net as to what im actually allowed to have. What I do know is that ive thrown out all the traditional carb sources in favour of veg.

My biggest problem is brekkie. I have a VERY sweet tooth in the morning and cant handle the thought of eating meat in the morning. The past few mornings my breakfast has been either scramble egss (i can handle) or a tub of cottage cheese packed with berries and an apple cut up. Tasty stuff.

One of the staples getting me through is my thai red curry or normal tomato based curry.

The red curry I make the paste as follows

    1" piece ginger
Zest of a lime and juice of half
    ground Corriander seed 1tsp
    Curry powder 1tsp
    3 garlic cloves
    1 red bell pepper
2 red chillies (1 if ya dont like it hot)
1tbsp fish sauce & 1 tbsp soy sauce
3 shallots (i also use about 4-5 stalks of scallion instead sometimes)

Blitz all that in a blender if you have one to make a paste. Then in a big pan (wok preferable) heat about 2 tbsp of coconut oil and fry in the paste for about 2 minutes or so (careful the chillis may catch on the back of your throat!) then, add a tin of coconut milk and stir it in should be a nice pale red colour. Then Throw in what ever veg and meat you want. I usually throw in about 3 chicken fillets, a whole head of broccoli and another red pepper. Let that simmer for about 15 min and then bingo, prob the tastiest thing you will eat in a long time! I accompany mine with an iceberg lettuce leaf and wrap it up into little parcels!

Another thing I had the other night ( was tasty as!) was a brocolli salad. Steam some broccoli leave to one side. Get some cashew nuts and heat them on a pan for about 3-4 min. Cut up a few cherry tomatos. Throw a bit of parma ham into a pan heat it up to get it nice and crispy mix all the stuff together. I dressed mine with a garlic and chilli infused olive oil and a little bit of salt and pepper but you can play around with it. That saddled with a massive hunk a steak and your in dinner heaven!

My kids are spice-a-phobes  so I rarely if ever cook curries any more...dh not so mad on them either!
welcome on board Thehamo. Would you try a veggie fry like I've been having - cherry tomtoes (a bit of sweetness for you!), mushrooms, spinach, fried egg & a fried slice of ham.

    So today is week 2
so in addition to the extra veg & fruit
Make sure you have a good roster of lean, ideally animal-based protein sources: chicken, turkey, duck, fish, eggs, seafood, lean red meats, game, etc. Get accustomed to having a bit of this protein with every meal.

This should be pretty easy for me as I aim for this anyway.

Thehamo... That paste sounds fab :-) my boys love spicy food so that's not a problem. Thanks for the recipe. I'll try it out the next time I have to cook which is Wednesday.

I'm on day 6 now & feeling great. Almost all the gunk is gone out of my nose & throat (my 6 year old brought home every cold possible between September & Christmas and I simply wasn't able to shift the gunk from my face :-( ). I'm not craving anything, I'm not missing baking (but am getting my home in some sort of order instead). I'm loving cooking & feel great about the food the boys & I are eating.

I worked out last night that my chilli costs €3 for the boys & I for dinner. You could probably add 20c to that for the pasta they eat with it. Dinner for the 3 of us, made from ingredients that I can pronounce & not from a packet, all for €3... hell yeah! that's my kind of food!

Sorry Dotcom, being a bit pedantic here but do you juice the spinach or can you put it into a blender?

I always find it hard to juice spinach as not sure much juice comes from it.

No I just put it in the blender with the other ingredients.

But I have juiced it before with fruit & it's been fine.

14! (obv not all full portions!) of veg + 3 fruit today
Protein wise I've had - egg, walnuts, goats cheese, prosciutto ham, prawns, hot smoked salmon, greek yogurt.

  • Registered Users, Registered Users 2 Posts: 608 ✭✭✭LoTwan

14! (obv not all full portions!) of veg

I had wondered about that. I count each veg that I eat, regardless of portion size. I'm hovering between 8 & 10 a day which I'm happy with as a good few are bigger than a portion.

I decided last night after a conflict & some furniture building that I would like a diet coke. It was very disappointing. I don't know what I was expecting but it was tasteless. I was drinking about 1.5L of diet coke a day over Christmas & went cold turkey last Wednesday.

I'm on day 7 today. My weight loss has stayed the same which I'm happy with. I have had some toasted almonds over the last few days which are yummy :-)

I had a banana yesterday evening & it was the nicest banana I have ever tasted IN MY LIFE!

  • Registered Users, Registered Users 2 Posts: 2,934 ✭✭✭Dotcomdolly

It's amazing how sweet bananas & esp dried fruit taste when you're not eating sugary stuff the whole time!
Good that you learnt that the forbidden fruit isn't all that sweet after all :) I was/am an emotional eater and the emotiont hat really triggers me is anger....and if you knew my kids, it's a constant battle!
I have not lost any weight since a decent drop the first few days but I'm happy enough where I am poundage wise, just want to be healthier.

this is not 100% paleo because of the butter ( and it needs to be butter ) but how about this one.

run a knife along a couple of courgettes then use a peeler to make courgette spaghetti - let it drain a bit so as to get most of the water out of it.
in one pan start to fry this at a very high heat in batches, it only takes 1 to 2 mins .
for your sauce - fry some garlic in butter ( big nob !), add spinach and cherry tomatoes and lots of basil in butter, you can add oregano ( nutmeg works great with spinach and butter ) etc as well, I would often add a chilli or two to mix it up a bit. Once this is cooked whack a good glug of Balsamic vinegar into it so you have a good sauce with the melted butter.
You could use cider vinegar I suppose which is more paleo but that's taking it a bit far imo.

chuck one into the other and you've a very nice "pasta" dish as a side to your pork chops or whatever and a fair whack of veggies as you'll easily eat a full courgette by yourself !

    sounds lovely!
I do a simpler version of ribbons just salted, rinsed & drained (in colander with a plate & weight on top) then I steam it in the colander over the (evil) pasta for the rest of the family. I do this when we're having bolegnase.

so today tot - 10 veg and 3 fruit.
protein - egg, smoked salmon, small bit of chorizo, coconut milk, protein powder, meatloaf.
