Making Cider

    I have a budding orchard and in a few years will have excess fruit etc. One idea to use up this excess would be to use the apples in a cider press which can be gotten fairly cheaply these days. Now, my apple tress are a mixture of eating and desert apples. Just wondering, can you make cider with any apples (albeit, not top finished cider) or do u have to use specialist cider apples?
