Cream cheese/Mascarpone substitute

    Hey guys, I'm slowly turning vegan but one thing I can't think how to subtitute is cream cheese. I use mascarpone quite a lot in my cooking - especially for a spinach and mascarpone pasta I make regularly - how could I replicate a sort of a creamy sauce?

    Any suggestions welcomed!

    Tofutti is the only cheese substitute I've found that I like, creamy cheese seems to be much easier to replicate than the hard stuff! I used to use tofutti to make a pasta dish with tomatoes and spinach and garlic and by the looks of it your recipe is based on the same kind of idea, I'd say it'd work fine!

    I must get some of that again, it's expensive but it's lovely

    Ah I did think of this but I didn't know anyone who had tried it! I seen it in Superquinn but I must be able to find it in a health food shop here. Thanks!
