I think there was a similar thread to this recently.

Anyway, SWG for a time, or the first KOTOR.

Jedi Outcast must get an honorable mention for being so far ahead of its time.

I was disappointed with Empire at War to be honest. I'm a big RTS fan, and found this wanting in comparison with some of the genre's bigger players...
