    I am generally a big believer in trying out what you get before thinking about swapping, give it a go and see, the stock tyres might be fine. Regarding rolling resistance, key here is pumping them up to a high enough pressure.

    Not really necessary at all. My brother had a Trek 7.0 FX very briefly, I cycled it once or twice and it rolls ok. It's not the most sporty bike to begin with, and comes with an aluminium fork, so the wider tyres are kind of necessary to provide some cushioning. I actually found the ride much harsher than my 25mm commuting tyres, so narrower tyres might make this worse.

    I would not bother replacing them until you either wear them down after a year or two of hard commuting, or maybe you will decide to upgrade the entire bike for something sportier next year.

    I am not sure what the minimum tyre those 750 rims will take, but I would have thought 23/25mm was far too narrow for them.
