Are there any settings I can use to get both MMS and tethering to work at the same time? So far it's only one or the other

Same as you, one or the other. The only workaround that I have found is to use PDANet for Tethering and the normal MMS setup. This is the only way that I have found to get both working without a degree in advanced iphonism
