Carrot Cake advice!

My friend's birthday is coming up and I want to bake her a cake...problem is I won't have time to do it the night before because of a family meal thing I'm going to. So, I've never made a carrot cake before (her fav) and I was wondering if I make it two nights before will it be manky or will it keep ok? Anyone got a decent recipe?

Carrot cake is great for keeping moist. Just make sure you lash it into an airtight container when it has cooled and don't ice it until that day.

I make this carrot cake every month or so and it'll keep for 2 days easily though once you begin to eat it it won't last long !

Thanks. That one looks very light, compared to other recipes I've looked at...decisions, decisions!
