If I copy and paste the contents of an Acrobat document into, say, Notepad I find that the result isn't faithful. For example, this text was originally like the image:
CAIGHDÉ IN AGUS FORFHEIDHMIÚ /STANDARDS AND ENFORCEMENT,
TEACH CHLUAIN FEARTA, SRÁID BHRÍDE, BAILE LOCHA RIACH, CONTAE NA GAILLIMHE.
CLONFERT HOUSE, BRIDE STREET, LOUGHREA, CO.GALWAY.
TEL:(...)...... FAX::(...)...... EMAIL::digitaltacho@rsa.ie WEB:www.rsa.ie
PUBLIC OFFICE OPENING HOURS:
MONDAY -FRIDAY
....AM -....PM &....PM -....PM
CAIGHDÉ IN AGUS FORFHEIDHMIÚ / STANDARDS AND ENFORCEMENT,
TEACH CHLUAIN FEARTA, SRÁID BHRÍDE, BAILE LOCHA RIACH, CONTAE NA GAILLIMHE.
CLONFERT HOUSE, BRIDE STREET, LOUGHREA, CO. GALWAY.
TEL: ()  FAX: ()  EMAIL: digitaltacho@rsa.ie WEB: www.rsa.ie
PUBLIC OFFICE OPENING HOURS:
MONDAY - FRIDAY
.AM - .PM & .PM - .PM

Original document here: http://www.rsa.ie/NEWS/upload/File/Driver%20Card%20Info%20Ver2%2031.07.pdf

Other times ", " [comma space] is interpreted as "," [comma], hyphens appear and disappear and so on.

Any ideas why?

Not fixing the problem but try FoxIt Reader and see if it works. If it doesn't, you may be missing a font

Notepad isn't made to deal with RTF documents which is what Adobe Acrobat is trying to give you. You have to use a word processor lilke Microsoft Word or WordPerfect.

No I don't think its that. MS Word 2003 is having hte same problem as Adobe Reader 7.0

What really worries me is things like the following:
EMAIL::digitaltacho@rsa.ie
EMAIL: digitaltacho@rsa.ie

In the original PDF (using Adobe Reader 7.0), one sees one colon (":"). The same in MS Word 2003 and Notepad. In Adobe Reader 4.0, one see two colons.
