Studding out interior walls & insulating

I'm looking to stud out some interior walls, mainly to allow for installation of recessed sockets, and allow for slightly improved insulation in an older house.

Plan would be to stud out using some wood and install some insulation between the studs, and then plasterboard and skim.

Was thinking of using polyurethane insulation boards, as I've seen them used as standard before.

Have seen polestyrene boards available also, but am guessing they probably wouldn't be up to spec for this sort of thing.

Any feedback would be appreciated.
