I make a sauce to pour over before baking of garlic/salt/pepper/soya s/ honey…. I crush garlic in pestle and mortor with bit of the salt then add other bits and mix.

You can slice meat thinly then flatten pieces and fry in pan with some spring onion choped and whole grain mustard added towards end and finally some cream to make sauce to serve with the 'medallions'. I might add some sliced mushrooms fried separately.

I use a receipe I saw on a cooking show 10 years ago. Choped carrots, celery, onions in a small tray or pyrex dish, cut the fillet in 2 pieces, or use 2-3 fillets if making extra portions. Pour in a pint of beef stock & half pint of Ale eg. Can of Smithwicks. Any herbs you like. Cover with tinfoil well, in the over for 90-120 mins, depends how soft you like it. Or throw it all into the slow cooker for the day. Leftover pork fillet can be cut thinly for sandwichs as well.

We use pork steak/fillet most weeks. I buy 2, cut the centre off both, slice down the middle without halving it and stuff, pop the other one on top, cover in streaky bacon and tie it up with butchers cord. Cooks in about 35/40 mins and usually enough left over for a few sandwiches.

With the top and tail of it I trim off the fat (the dog loves this bit) and slice it very thinly for a pork stir-fry. A roast dinner, a stir fry and a few sandwiches for less than a tenner.

Oh, I see there are Cyprus potatoes available. Anyone tried them?

I'm looking for a good waxy potato for potato salad.

Yesterday, had British Alexandria salad potatoes from Lidl. You might like those.
