Rosti, two poached egs, asparagus and some blue cheese. The blue cheese made it just a little too salty if I'm honest, but still rather tasty all the same.

It doesn't need to look pretty when it is that good, yum!

I've been snacking all evening on mixed pickles, olives, pumpkin seeds and white wine.

The best that I can muster now is soup (red lentil, tomato, celery, carrot, courgette, turnip, rose harissa), along with some toasted pita, Edam, bacon.

Fillet steak and mash here this evening.

I managed to cook my steak perfectly. Just a smidge of pink in the very centre. I usually slightly overdo it (unintentionally).

Apart from the pickled onions, I would absolutely devour that plate of food.

Nothing for myself, but I cooked steak and chips for two guests yesterday. One of them brought this huge cheesecake which I couldn't resist.

Pork ribs with a BBQ marinade. Wasn't in any mood to cook this evening, so took the easy way out.

    20260430_202558.jpg

They were unreal, I don't know why I don't have them more often. I don't know why, but I only ever seem to have them in warm weather/the summer time.

Three racks of big, thick, juicy ribs for a tenner. Can't go wrong.

I have never eaten ribs. How did you cook them @Snowcast?

    Home made burgers.

Air fryer. 180°C for 40ish minutes, take out, turn over, and leave uncovered for 20-25 mins. Keep an eye so they don't burn, as I find the marinade can sometimes burn before the ribs are finished, if you feel they are starting to burn, cover them with parchement and tinfoil, and continue cooking.

I always cover them with parchement paper and tinfoil (I use the parchment paper as I find tinfoil can stick to them otherwise, and I don't fancy eating tinfoil…😂)

Ribs are gorgeous, but I've only ever gotten them from the butchers as the ribs themselves are big, thick and juicy. And work out better value than what I have seen in the supermarket, when you consider size and cost.

I got three racks of ribs, fed two of us, for a tenner. And if it was just me, I'd have frozen the rest before cooking.

Mediterranean veg and pesto lattice with spuds and last minute addition of a fried egg to make it less bland.

Home made bread, which took an age. Burgers and mozz.

Chicken Kyivs, pepperoni pizza here this evening. Both needed using up.

Ham steak, which believe it or not was cooked, odd lighting is all I can think of, mustard tarragon cream sauce, mix of chard and spinach and some boiled spuds.

That mustard tarragon cream sauce has me interested… I remember my first time tasting tarragon, which was in a chicken gravy, in Paris. Blew my mind.

I do love tarragon in a sauce though admittedly I only had dried rather than the fresh stuff which is infinitely better, still this one turned out rather nice, especially with the potatoes.

Last night was salmon, potatoes, broccoli, peas, aioli, mint sauce, lemon juice.

(I love using mint sauce as a Medi/Middle Eastern condiment on lentil soups, roast vegetables, hummus, flatbreads, lamb kebab… yet it is easily and cheaply available here.)

    Tonight, Indian restaurant food.

I rarely do burgers, because I'm not a huge fan, but this one actually wasn't bad at all. Burger sauce, caramelised onions, manky cheese. Solid.

No marks for presentation here, but skewered chicken with bulgur, hummus, roast vegetables, pickles etc.

All my effort & I produced this sad looking plate 😄 and then it tasted even more sad than it looks 😁

Stuffed pasta with chicken, chestnut mushrooms & sun-dried tomatoes (I forgot to buy spinach, even though it wouldn't have made a difference anyway)

    1000011122.jpg 1000011123.jpg

Used a rotisserie chicken because I wanted one less step to think about.

Sauted shallots, garlic & thyme. Then mixed ricotta, mozzarella, an egg and sun-dried tomatoes (not many of them because I normally don't like them but it might have helped to have a few more)

The filling was sooo bland (& I just realised now that I didn't season it - doh) but was surprised because I thought the shallots & thyme would have been enough flavour.

Anyway, another fail to add to my list 🤸‍♀️

    ....…

2026: 'This is where something better begins' (←well that plan ain't working out too well)

    They look great Sinead!

If you have some left over for tomorrow, I bet they will taste really good. Sometimes, I find that if I take a lot of time preparing, or even thinking about, a dish, the final experience of eating it falls flat. But, it's psychological, I suppose.

I was just thinking recently of getting some of those big pasta shells, and stuffing them with a tuna and corn mix, hmm… baked in tomato sauce perhaps?
