    Nobody else eats avocado so any tips for keeping a cut half for the next day? Tried a sealed container or wrapping in tinfoil but no joy, still went a bit discoloured.

    Soak it in lemon juice. Or mash it and add lemon juice.

    Keep the seed in the left over piece & wrap it. Sometimes the exposed edges turn brown but I just skim of the edges & the rest is perfecty fine

    Give it a quick rub with some citrus juice and cover tightly in cling film is my go to...

    I've searched online in a few stores that I thought might sell them but having no luck.

    Try Lidl/Aldi, sometimes they have "conchiglioni".

    The fancier delis/grocers are your best bet, they usually have the Di Cecco ones. Get Fresh in Ballyroan used to be my go-to, don't live near there any more, though.

    Now all I want for dinner is the Ottolenghi lamb stuffed ones 😭

    I've tried M&S, Meadows & Byrne, Fallon & Byrne and Nolan's in Clontarf but their website is useless, it doesn't show their products.

    Also tried a couple of Italian stores. (There was one website I found but I'd need to make a €50 order. Or buy 12 boxes from Amazon)

    I didn't realise it would be so difficult to find these.

    They have them in Get Fresh. 99% sure Aldi have them too.

    I had looked in my local Aldi before & didn't see them. I also checked their website & they aren't listed.

    I've checked other web pages too to see if they were ever a thing in Aldi, but are just not showing on their website, and I don't see any mention of them

    If I'm passing TK Maxx any time soon, I'll try in there aswel 🕵️‍♀️

    I defo saw them in Aldi before. Maybe one of those seasonal things though.

    If they're leftovers from a good while ago they don't list them, they just have them on the shelves or the discounted baskets.

    I know Lidl had them yonks ago because I only opened a pack earlier in the week.

    It is Italian week from Thursday 16th in LIDL but I didnt see any special pastas in the leaflet.

    I've just remembered you can get these in Dunnes, in their Specially Selected range. Or you certainly used to be able to, anyway, cause I just found a photo of them in my phone.

    I'll look in the middle aisle in Aldi next time I'm there. Mostly I don't look in that section (I go to Aldi specifically for the cheapo/knock off stuff😁)

    Dial Hard, I did check Dunnes website aswel but I'll check in store too. I'd be very surprised if they didn't have them.

    Meant to say, if they're not on the leaflet they wouldn't be in the middle aisle, but in the "leftovers"/too good to throw away areas.

    I experimented with a technique of very slow cooking aubergine, red pepper, large tomato slices in just the little oil that was rendered from some diced salami. In a wide non-stick pan (so no fond), uncovered. On an electric hob, heat 2 (3 at times) out of 9, around 30 to 40 minutes overall?

    No other oil or water was added. The aubergines were salted. Each vegetable stayed separate with its own flavour. Not greasy, not stewy, really great. I'll try it again with courgette. The salami was added back in at the end.

    🧐 Uncovered sweating, or dry sweating it might be called in culinary terms?

    A question for all the bakers out there….

    I made it to this age (considerable) and made banana bread for the first time last week - it was gorgeous, but awfully sweet.

    If I wanted to reduce the amount of sugar in it, do I need to make up the weight with flour instead? Or do I just put less sugar in and keep the rest of the recipe the same?

    Also, is too much mixing a bad idea? The first one was a rip-roaring success, the second one I used much less ripe bananas (not green, but firm yellow) and it took a bit more mixing to get them mixed in. It was much heavier, and I suspect I may have overworked the mixture. Am I right in thinking that?

    Hi folks,

    Does anyone have any recommendations for whiskey for cooking? Normally use Jameson Black Barrell, but at €35 I'm not buying it (usually get it around Xmas for under €30, but didn't get it Xmas just gone).

    Don't really drink it so it's just for cooking. Mainly just sauces, apple tarts and things like that.

    Have had Slane whiskey before with coke and thought it was nice, but not sure how it'd be in cooking? Thought it was sweet, but that may have been the coke…

    Lidl and Aldi are your friends here.

    I use their cognac, bourbon and whiskey for cooking. You wont notice any difference between it and better stuff once you boil it, mix it with another 400ml of stock etc.

    Same for wine. I pour the last of the undrank wine in a bottle (the rare time there is some!), vacuum seal it and store it with the rest of the sauces, oils, vinegars etc.

    Canned sardines... I love them.

    I usually use the tomato variety, but some of the more expensive ones are a nice treat.

    And they seem very much in vogue these days... I don't think I'll be doing the sardine fast though, I have to have them in toast.

    Chinese sauces like yellow bean sauce, hoisin or LGM Chilli Crisp would be my usual additions.

    Unfortunately I can't deal with the bones in fresh sardines, but they are delicious.
