    Cyprus.

Maybe not. Or maybe yes, you might get a good deal.

Crete or Malta would be lovely and so should most of Spain although Portugal could take another few weeks after that to get properly hot

I remember doing a week in Cyprus at the end of May and while the weather was very pleasant, sunny everyday, the sea temps was still surprisingly chilly so maybe consider something with a pool option.

Otherwise any of the Canaries should do, although I was in Lanzarote in early June before and it would get chilly in the evenings.

Malta is great in that with a family there's loads of ancient stuff to do, walking around Valetta is a great day out on its own.
