    Basic gin sours always work and can vary depending on flavoured gin or fruit sugar syrups.

    50ml gin
    20ml lemon juice
    15ml sugar syrup (regular or fruit-infused), or more depending on how sweet / fruity you like.
    Egg-white

    Dry-shake initially with egg, add ice, then re-shake.

    Used Fig & Laurel Gunpowder Gin with above (sugar syrup) recently and was delicious. Topped with dehydrated lime for decoration.

    Elderflower syrup is fantastic in gin sour type drinks.

    Last weekend we had a few friends over and I added orange bitters to my old fashioneds and i'd fully agree, it was a game changer.

    Might just make some more tonight actually 😁

    Seville oranges are around at the moment. Juice is great in cocktails.

    The acidity of lemon with the taste of orange!

    I think I'll be doing a margarita type thing without cointreau.

    Tequila, seville orange juice, elderflower cordial, salted lemon rhubarb bitters, egg white. Chilli, salt, citric acid and sugar rim.

    It's very good 😊

    Looking for advice from the regulars here.

    I bought a few bottles from Black's of Kinsale recently and they're all fantastic……..bar one. The apple & kiwi gin they sell is a bit funky, I need something to mix it with to balance out the kiwi element. It's not super strong, but it overpowers the apple flavours. I tried a basic tonic and it's a bit weird. Not exactly unpleasant, but I wouldn't be ordering it in a bar.

    Any tips on what I could try next? I was thinking maybe cloudy apple juice and soda water. Has anyone ever tried this or found anything that works with it?

    Ginger Beer maybe, I don't know what exactly you mean by funky, but aged Jamaican rums are often described as funky, and pair well with Ginger Beer.

    You probably don't, but if you had some calvados you could try mixing equal parts of your gin and calvados and have it over ice

    I could see apple, kiwi and tonic being a strange flavour combo alright. I'd try soda water and add maybe some fresh mint and/or lime juice.

    Ginger beer also a good shout.
