    My wife makes them and she uses egg wash at the join and just pinches the pastry together tightly

    125ml buttermilk to half a can of Guinness , 300g wholemeal flour.

    My wife did the Christmas bake today. She baked everything up the the quiche before telling me that the oven wasn't working properly as the fan wasn't spinning.

    Turns out she had turned on the grill, not the oven 🤦

    Disaster averted by putting everything in the oven again upside down for a short while.

    The savories were my job.

    One of the many panettones that I made before Christmas. Being making them for a few years now and this year they finally all came out fairly decent without too much work and worry.

    Not sure if you do thia already, but if you stick a few long skewers around the base of the panettone (say about an inch) as soon as you take it out of the oven and suspend it upside down from them to cool, it's supposed to help to keep the shape of its "dome".

    Yeah, it's the only way to do it. I do 3 at a time and my set up is far more rough and ready than the above photo. Picture multiple piles of books on the coffee table.

    The mushroom-like dome is the main aspect of it that I can't get right. It balloons up in the oven, but has already settled down before I take it out. But the crumb is very light and fluffy and that's by far the most important thing. So I'm ok with the non-prize winning looks.

    It's not baking proper, but I don't know where else to post these. I think they look like sea glass or unpolished gems. They're candied mandarin orange peels. I'm still working on the candied orange ones. The kitchen smells heavenly and they taste amazing.

    Also, just in case someone else wanted to try this, make sure the label on the boxes or nets of citrus fruit you get clearly state that the rinds are edible and untreated (I don't mean just 'unwaxed').

    This is the opposite of baking, but I put half of the candied peels to good use. A birthday cheesecake for a gift.

    I tried to reverse engineer the Tom cruise white chocolate & coconut cake he gives out at Christmas as a muffin.

    Bread and two x 1lb. Tea loaves.

    Interestingly, the lighter coloured loaf was cooked on the lower oven shelf. Don’t think I can get two loaves on one rack? (Actually…..I did before) Fan on. It was baked on my new cast iron tawa which made a huge difference to the base, hollower sound and browner finish. Upper the temp by 20c for the first 10 minutes and baked for 10 minutes longer. Big difference. Same with the tea loaves, upped the temp slightly and several minutes longer. Don’t be a slave to recipe temps/times is what I’m learning.

    Have you checked your oven temperature?

    Not suggesting anyone should be a slave to recipes, but it's also possible the oven thermostat is a few degrees off.

    Edit: left out the most important part, the bread and tea loaves look great!

    I sometime have a problem with my brown bread where the top crust comes away from the bread underneath (see the left hand side of the photo below) - anyone know what causes this or how I can prevent it?

    In my quest to get level, uniformly baked sponges, I dropped the temperature by 20c and bake for an extra 5/10 minutes. This seems to have solved the problem of “erupting” sponge uneveness. I think 😀.

    Re: the brown bread - Are you cutting it too quickly after you've taken it out? It doesn't have to be cold but I started cooling mine for a good bit longer, like it might be a tiny bit still warm but butter wouldn't melt on it and that seemed to let it rest in a way and not pull away.

    If you are letting it cool, I don't really know, but I kind of flatten my mix in the tin with a knife to even it out a bit and I don't have that issue anymore with both of these tips.
