In the spirit of "What did you have for Breakfast/Lunch/Dinner" threads from Cooking & Recipes, did you bake anything tasty lately?

[The usual rules for these threads in C&R is no picture quoting and no pimping of your blog]

To start I'll offer up last night's loaf of bread. Basic white bread with a bit of horlicks and wheatgerm. Usually baked in a loaf tin but last night in a casserole dish to change things up. It's even harder to try to slice up

Not sure if you do thia already, but if you stick a few long skewers around the base of the panettone (say about an inch) as soon as you take it out of the oven and suspend it upside down from them to cool, it's supposed to help to keep the shape of its "dome".

My wife did the Christmas bake today. She baked everything up the the quiche before telling me that the oven wasn't working properly as the fan wasn't spinning.

Turns out she had turned on the grill, not the oven 🤦

Disaster averted by putting everything in the oven again upside down for a short while.

The savories were my job.

Any of the supermarket luxury range ones tend to be good.

I usually buy a cheap one and tart it up with orange zest, chopped glacé cherries and a slug of whiskey or brandy. Maybe a bit of grated apple if it looks dry. This year I used a glug of my own bourbon vanilla extract and it's phenomenal!

I think that's just the nature of puff pastry - it puffs up when cooking.

You could try stabbing it all over with a fork to reduce the rise. Not sure how that would come out.

To these very knowledgeable bakers, what would be the best shop bought mincemeat?

Is home made mincemeat significantly better that it’s worth the hassle? Can it be frozen?

Silly question to all the bakers here but when making sausage rolls how do you keep the puff pastry tight to the sausage so the end product doesn't have a big air filled vacuum between the sausage meat and the puffed up pastry? My sausage rolls always fall apart very easily becuase the top pastry and sausage are completely disconnected by the time the rolls are baked and have cooled down. It's almost like there's a steam effect inside the sausage roll as it bakes which creates an air pocket.

FWIW I just use regular supermarket puff pastry and sausage meat with a little black pudding blended in. I don't put a layer of cranberry sauce or anything on the base of the sausage roll and always use egg wash to coat the pastry after I've rolled it into shape which always starts off fairly tight / snug.

Bannetons.

So, I bought a pair of bannetons a few years ago with the intention of making sourdough. I tried and tried to make a sourdough starter, one winter, but failed. Might try again shortly. So this morning I lumped my regular 80/20 white/wholewheat into the two bannetons to second prove.

Tonight, stewed Bramley apples topped with porridge flakes, melted butter & Demerara sugar, then baked. Would have been served with whipped cream if the people I live with had left it to cool long enough to photograph!
