    A cheap n cheerful soup courtesy of Lidl - pack of winter veg (€1.99), 2 sticks of celery, a chicken stock pot, a rind from old parmesan, some parsley I have growing on the windowsill.

    A swirl of sour cream to add a bit of indulgence, some toasted seeds, and a seedy Ancient Grain Roll on special from Lidl.

    If I don't get my day's fibre from that, there's no justice in the world.

    Absolutely gorgeous, and I got 5 hefty portions from the 1 pack of veg so I reckon lunch cost me approx. €2 max in total, and I'm stuffed!

    Pea soup… so good and so easy… I used a mix of split green peas and frozen petit pois. Pumpkin seeds and a few drops of rapeseed oil for topping; apart from that there was no meat or oils added. A bit of M&S Greek seasoning.

    Just made very easy Carrot and Prawn soup - it was make it up as you go along, but it ended up really nice.

    4 largish carrots, one large courgette, small onion, sliced up, sauted a bit then simmered in about half a pint of fish stock. Blend. Add can of coconut milk (83% one from Aldi) and thawed prawns, re-heat (don't boil or the milk will separate). I pondered spices etc but ended up with just plenty of white pepper.

    Carrot soup is a great base.

    Never thought of adding prawns before, sounds great especially with the fish stock.

    I recently made a carrot soup with Indian spices, added chickpeas after blending with some dried fenugreek leaves. Very satisfying.

    Made two of my favourite soups again.

    Split green pea with smoked pancetta (erwtensoep), and also Mexican black bean (like savoury chocolate, cumin spiked).
