Tray Bakes

I made this the other night and it was excellent:

As far as I recall, yep. I did put the potato/onion mix in the tray first, though, and then made the stock as normal and poured it over. Doing it the way the recipe mentioned just seemed in the wrong order to me.

Must make this again, actually, have a wrap of miso butter in the fridge that could totally go in it.

How'd you get on?

This is a veggie one, we do this with a roast chicken. Just put it on about 30 mins after the chicken.

Microwave baby spuds (the ones in the bag microwaved and then cut in half), full garlic cut in half, three tomatoes, a few olives (not really needed) a peeled new potato (chopped same size as the microwave spuds) 2 onions quartered, 2 bell peppers chopped in half and deseeded. Pour lots of olive oil and Balsamic vinegar over them with a **** load of Maldon salt. In to the oven, mix them up half way and serve.

The left over sauce with the garlic cloves squeezed out of the peel mixed with the chicken juice and a spoon full of creme fraiche makes a good gravy with a hand blender.

Looks like you're feeding 48 people when you're prepping but feeds about 6 with two small chickens or one massive one.
