    Letting the coffee go cold always tastes like muck, either start from cold (cold brew) or make it cold fast (ice). If you insist on using instant, whisk it into a tiny amount of hot water and then add ice cold water to chill it. Ice can be strained out. Then add as much milk as you like. For the sugar sorts, you want to make up a simple syrup, chill it and add that so it dissolves well in the cold drink

    Sardine pate on toast. A tin of sardines mixed with a little butter ,fresh parsley, lemon and finely chopped red onion plus pepper/salt

    Half toast the bread ,turn it over and spread the pate on the toasted side. Put it back to reheat (maybe cheese on top)

    Have been using Shines(expensive) Wild sardines but I wonder why the fish are so small. Maybe irresponsible fishing?(really cheap in Lidl)

    Sometimes there's just no beating the old reliables.

    Toasted sourdough with butter and Marmite, poached eggs with lots of freshly ground black pepper and crispy grilled smoked streaky bacon all washed down with a freshly brewed Americano.

    Today I had no breakfast as I am doing a 36hr fast. It’s fairly easy but very boring to deprive yourself of so much yummy foods. ☹️

    Refeeding is the worst part for me, it's very hard to not want to cook up something rich and delicious immediately after breaking the fast 😂

    One of the benefits of having a lot of spare time during Covid was, like many others, I started messing around with Sourdough and eventually got some results. I've continued on making Sourdough once or twice a week as it is just so easy to make (I've refined my recipe / process to be ultra easy and not at all time consuming) and not only does it taste great and is better than using slice pans etc but it lasts for 4-5 days in the bread bin and when toasted on days 3-5 really works well for poached eggs and sardines on toast etc.

    Is it really that difficult to make - it sounds like such a laborious process whenever I hear people talking about it. I hope to be in my own house in the next few months so maybe I'll give it a bash then!

    It's not really, some recipes require you to stretch and fold the dough every 30 minutes for hours but through months of trial and error I've replaced all that faffing with a €50 Aldi stand mixer and instead of proving the dough for 6-8 hours on a kitchen counter I just use the "Bread Proving" option on my oven for 1.5 hours so all in I spend about 20 minutes actually handling the ingredients and dough and that includes baking it.
