I bought a phone last year on bill pay and was able to make the payment for the first month but lost my job and used all my savings and JSA to keep a float.

I forgot about the phone and now I'm being threatened to be taken to court by CMOS. The total outstanding balance is €1,200. What are the chances I'll be taken to court.

Zero. It would cost thousands. You should do the right thing and pay off your debits. Next time don't buy a phone at a stupid price. A 200 euro phone would do 98% as much, at 1/6th the price.

Don’t ignore this, it’s not with the phone company any more the debt collectors own your debt now and with the sum owed they will look for a judgement against you.
You can try calling the collections department with the phone company and see can you come to a deal they may let you pay off the debt in increments, failing that engage with the debt collector and see will they take a little less.
This can go to court with or without you, a sheriff may be involved to seize your belongings to cover the debt and your credit rating will have a bad mark on it, making it very hard when you want a credit card, mortgage, car finance etc.
