And it seems to be working.

I've been having too much Exputex for breakfast.

    Quay co-op, Sullivan's Quay.

    Around €3.20 or €3.50 (can't remember) for 15 teabags.

    I find it really effective.

Maybe you could try dried thyme in a French press style coffee pot if you have those at home?

Thanks, I’ve checked and they also have them in Here’s Health in Douglas so I’ll pick them up tomorrow. Hopefully they work.

If I were to have a fried egg, this would be it. Crispy fried! No wet stinky whites :/ How do I make them like that?

(this kind of reminds me of the egg and soldiers I used to have as a kid)

This is how we make it, but it’s to our taste (both adults) some might like it stronger or weaker. Half to 3/4 teaspoon of dried thyme in a tea infuser tongs - we got ours in homestore & more and they have them in ikea. Put tongs into mug, fill with boiling water. Leave 3/4 minutes, remove tongs. Add honey and lemon to taste.

It's fried on a steel pan, REALLY HOT, and then briefly turned while it's carried from hob to where the plate is waiting. Non stick doesn't get the right type of bottom, so you want steel (carbon or stainless) or cast iron. Don't skimp on the oil either, this was fried in the remants of a packet of streaky rashers (that were conversely cooked slowly to really render the fat (usually I use whatever vegetable oil is around, so bacon grease was a treat!). I think last time I was asked I posted about seasoning stainless steel too (get it hot, get it oily, let it cool, then you can heat it up again).

Excellent! I have an old cast iron skillet, that really needs to be seasoned again… could be perfect for this. Thank you @Tree!

+1 for the slow cooked rashers, it's the way to go, and with pork fat for further use :)

McCarthy's (Kanturk) bacon for me. Great in the air fryer too.

Cheers for the thyme tea shout. I'd never heard of it before and I passed it along to a friend who was very grateful. This is why this thread is good:-)

Not what you asked but it's very easy to make. You just need some leftover mash and flour.

Toasted bagel with cream cheese, heaps of wafer thin turkey breast, a generous sprinking of Sriracha sauce topped with mature red cheddar.

Bit of a fridge leftovers type brekkie (more brunch than brekkie) but it did the trick.

When you have a day off, but the shops are shut and you can’t get mushrooms, on comes the super sub, potato cakes. 😀

Was absolutely starving this morning after a very early start to do an airport drop off then home and to the gym. By the time I got back from the gym I was ready to go big for brekkie!!

2 slices of 3 day old home made sourdough toasted with butter and marmite.

3 fried eggs, 2 sunny side up and one over easy with freshly ground black pepper.

    Some grilled smoked streaky bacon.

    A freshly brewed Americano.

    Sorted until dinner at 19:00.

    Wonderful!

Oh, as much as I dislike egg whites, I love runny egg yolk!

And fantastic looking sourdough! Did you make it yourself @54and56?

I must try soft boiled eggs again, just for dipping the buttery soldiers in. I might need to buy an egg cup or three! 😋 🐣

Yeah, I'm one of the Covid sourdough converts. Decided to try it during Covid to fill time and after 12 months of trial and error and lots of flat brick like outcomes which were barely edible I now have a recipe and process using a stand mixer which is mega low maintenance and takes less than 30 minutes of my actual time to complete including baking. I make one loaf a week on Friday mornings which gets used over the weekend and there's usually 1/2 to a 1/3 left come Monday and that gets used with soup for lunches or whatever but needs to be toasted to bring back the freshness. Anything still in the bread bin Friday morning when the new loaf is baked gets turned into crutons. For whatever reason the loaf seems to stay fresh(ish) and edible in the bread bin for the whole week with no blue mould or anything.

Soft boiled eggs are a regular brekkie in my gaff. From thinking I'm hungry to sitting down to devour boiled eggs is usually less than 10 minutes so a great option if you are busy / tight for time.

    Well done! 👍

I've never been any good at making bread at home, but that's a great skill to have.
