there's a few options if you use a usb tv tuner and a pc or raspberry pi. you could look at libreelec/kodi or nextpvr.

Will Number 2 work in the OP?

It will almost certainly receive Saorview channels and record them as it has 4 Freeview HD tuners. It will not series link programmes as you state and may or may not show subtitles but will record just like my Panasonic Freeview HD records Saorview channels here in N. Ireland.

There is a present problem re setting 2 or more Saorview recordings simultaneously on different muxes. This has been pointed out on another thread -https://www.boards.ie/discussion/2058236879/panasonic-dmr-hw150-hdd-recorder-issues#latest and is not the fault of any particular recorder but is caused at the Saorview end of things due to the signal sent at start of every programme. However you can simply use manual recording instead of using the epg to overcome this issue.

Apologies I took your final sentence in your opening paragraph to refer to recording rather than series link.

I don't know about the VPN bit but Freeview is not widely available down south, mainly along the border and parts of the east coast. A satellite dish would be needed for UK tv in most of RoI, also the Saorview channels cannot be renumbered on the Humax, so they end in no sequence and numbers all jumbled in the 800's.

You may be right, I used a Panasonic Freeview box a few years ago, it was the only one, at the time, that allowed moving the Saorview channels into the low numbers. Most Freesat and Freeview allow a degree of customisation, so you can swap BBC or ITV regions in their designated numbers,101 or 103, that's the way it is on Freesat but things change.
