Considering the price of wood I was looking at using metal studs rather than 2x4 since it also doesn't need to be loadbearing.

Has anyone done something similar with metal C stud?

A lot more awkward to fix things to a metal stud.

As far as I know, a brick wall needs to be either vented externally or fully breathable internally, i.e. no vapour barrier and avoid plasterboard, gypsum plaster and acrylic paint.

Wood fibre insulation and gappy cladding might work out easier to install for a given level of performance, if you don't want to vent it.
