Free Range Chicken Fillets

    Just a thought I was having. You know you can get free range fillets? Well what happens all the other parts, i.e. you never see free range thighs? Obviously there are free range whole chickens but there's nothing left over from that, yer buying the whole chicken!

    First they came for the socialists...

    I get the whole free range chicken in Tesco, but I've noticed they seem to stock thighs and drumsticks as well as fillets:

    Also got free range thighs in Tesco yesterday. Smaller selection though, they don't do the boneless thighs in the free range range

    I’m sure I’ve gotten free range wings in Tesco too although it was a few years ago.

    I got them before in Tesco. I'm only there every so often so I don't know if they have them all the time but you can get boneless free range tights in Tesco.

    Didnt know Tesco did boneless free range thighs, must check that out. I get the thigh fillets from Aldi quite a bit, 2.99 for 400g but theyre not free range.

    Has anyone here got the knife skills/patience to actually fillet a bone in thigh? I tried it once before and it was grief doing four of them so Im glad that filleted thighs are freely available. I wish they would sell them chopped up into cubes because thats always the way Im using them anyway in curries or stir frys.

    I do it all the time.
    Sometimes full legs, too.
    Once you get the knack, it really pretty quick and easy. 6 thighs takes me less than 10 minutes.

    I've even boned out chicken wings!
    This is easier than you might imagine but isn't quick.

    Didn't know Tesco do them. I'll pick some up tomorrow if they have them. I got fed up trying to de-bone thighs and making a mess of it. I just cook them bone-in now but I'd prefer boneless.

    The Cavan man in me can't pass a tray of six thighs in Aldi for €2. It's €4 for 4 filleted thighs! :eek:

    It's all about the prep. Have a basin of hot soapy water available at all times and sharpen your knife.

    Peel the skin off, cut off any excess fat. Run your knife along the bone, both sides and then underneath. Cut out the bone and then cut off the bit of cartilage that's left on the fillet. You're done in about 30 seconds!

    The biggest pain is washing your chopping board afterwards. Trying to remove the bits of chicken left on there without them sticking to your scouring pad/cloth. :mad:

    And use the skin to make chicken "scratchings". I just put them in a roasting tin with a sprinkle of salt and into the oven with whatever else is in there. It renders quite a lot of fat - schmaltz - too.

    Posh chefs chop up the scratchings and sprinkle them over the dish they've cooked. Me, I just eat them as cook's perk :)

    I have never seen them, not showing online but might be in different shops if there is more demand. The regular boneless thighs are 9.50 per kilo which is crazy.
    6 thighs takes me less than 10 minutes.

    My trick is not do be careful doing them, if you try and get all the meat off it takes way way longer. You can get a scissors if you want to be extra quick (as it is safer and some might go slower with a knife). You just hack off a good bit of meat and purposely leave plenty on the bone. Then cook the bones with meat all at once with spices on them, the deboned meat can be saved for another dish. So they come out similar to chicken wings, you just eat the meat off the bone. They are quicker to cook too.

    Negative so far - looked in a couple of stores ( an Extra & a 'normal' )

    Was reminded that some years ago Tesco stocked Moy Park organic chicken thighs. No buyers, so always lots of them RFQS :). Then one terrible day the line got delisted :D
