Yup, that's the one! Haven't tried it yet, but looking forward to it :)

I've made this before. Your kitchen will smell like wet dog for a while after adding the fish sauce. My partner was like no way am I eating that when I was making it. But it all works out and its delicious (and he did eat it and enjoy it FYI).

Since I'm here my meal plans for this week albeit we are halfway in:

Monday & leftovers TuesdayIndian beef keema

Wednesday: Chicken pasta w/spinach and sundried tomatoes

Thursday: Tomato risotto - trying to use up our tomato plant harvest

Friday: Gyoza from the freezer made previously. Good one for pork mince too but finding the wrappers can be hit or miss.

    Saturday: Unplanned freezer dive

I made the Vietnamese caramelised pork bowls the other evening - it was not a success The teenager went upstairs to change his socks during cooking as the smell was so bad he thought it was feet. The pork never caramelised for me - so it just tasted like sugary pork. The smell really did linger for quite some time!

Today's online shop arrived, think the meal plan this week is:

    Today: Homemade pizza
    Friday: Korean Fried chicken burgers
    Saturday: Spaghetti Bolognese
Sunday: Steak with baked potatoes and mushrooms/onions
    Monday: Katsu chicken curry
Tuesday: Sambal pork noodles (posted on pork mince thread https://www.bonappetit.com/recipe/spicy-sweet-sambal-pork-noodles?verso=true)
Wednesday: Some one pan dish with chicken thighs - depends what is left veg wise.

    Cottage Pie

I never do out a proper meal plan per week but I do have a general idea of what sort of dinners I'll do when I'm doing the grocery shop which gets picked up on a Friday.

Sat - dinner at the in-laws (post lockdown/birthday dinner)
    Sun - burgers
Mon/Tue - Slow cooker chicken fajhitas
Wed - chicken korma with garlic flatbreads
Thur - mystery dinner to use up stuff - maybe a creamy pancetta pasta
    Fri - pizza night

Gonna make a leek and potato soup too that'll cover a few lunches and I'm a big fan of jacket potatoes with whatever leftover sauces I have from dinner.

I'd love a recipe for this, if you have one going? Only recently found a place selling 'nduja and it has been thrown into everything since (supervalu Killester, in case anyone's wondering).

I made 'nduja, pork and rosemary sausage rolls this morning using the superquinn sausage meat and must have eaten about 12 of them so far.

I haven't ran the meal plan past himself yet, but at this stage, he'll eat what he's told/given :P

Saturday: Chicken korma (the lazy kind from a jar)
Sunday: Steak! With fried onions, potatoes and veg.
Monday: Creamy tuscan chicken with spinach and sundried tomatoes. Probably with pasta.
    Tuesday: Leftovers from Monday
    Wednesday: Deconstructed shepards pie
    Thursday: Leftovers from Wednesday
Friday: Meat, potatoes and veg. We'll just see what meat looks good in the shops.

The exact days may get shifted around.

I use this recipe and just mix small dabs of 'nduja in - https://touch.boards.ie/thread/2056852574/1/#post82628769

'Nduja sausage rolls - GENIUS! I should probably not make these, though, cause I'll just eat them.

My meal planning has gone to hell recently.

All of my fresh fruit and veg are going off while I'm living on sandwiches :(

Not sure if it's the onset of winter or lockdown or something.

To get out of the rut, im planning on making a cabbage and tomato soup. Something comforting and healthy.

Half the tail going in the freezer. ;)

Freezer and fridge audit has lead to this being the cooking plan for the next two days, to be consumed during the week or next week

Large pot of gumbo, may make 6 servings so 4 for the freezer
Spicy meatballs (have the meatballs, need the sauce) for two servings
Korean beef with a pear marinade, single serving

And this is the 'reconstruction from frozen ingredients' one

Chicken katsu with chips - everything frozen and ready
Matar paneer with naan bread - everything frozen and ready except the naans. Main meal will be constructed from frozen paneer, a frozen curry base, frozen peas, frozen coriander and some extra spices
Lasagna - have the ragu cooked, just need to assemble and bake.

Also, after the pub soup thread from a while ago, the bag of chopped leeks and bag of sliced carrots in the freezer is likely to end up as some pub style cream of vegetable soup. Bought a load of frozen veg at the start of Lockdown 1 in case we couldn't get out to the shops; but that never happened.

This thread inspired me over the weekend to try organise myself better. Currently without a microwave so trying to make do.

Breakfast: same as always, porridge...how exciting. If I'm in the office I may treat myself to a sausage roll or if I'm up really early I'll make some eggs but its mainly porridge. May have to be toast until we get one.

Lunches are the same as always, ham, cheese, tomato and lettuce sambos with crisps or popcorn I pop myself for me. Himself will have a cup of soup with his.

Snacks are chocolate rice cakes and cheese sticks or cheese and crackers

    Dinners as followed

Today: bacon and cabbage with mash and veg
Tomorrow: leftover bacon in an omelette

No set day for the rest of the week but I have a plan:

Potato and parmesan galette with a soft fried egg
    Homemade burgers with peppercorn sauce
Wedges and chicken tenders (lazy freezer meal)
Salt and chilli chicken with egg fried rice and curry or a quick veg stir fry depends how I'm going
    Takeaway on Saturday.

Let's see if I stick to it

We are the picture of health, we had Fray Bentos chicken pie last night with baby potatoes, carrots and brocolli.

I picked up several of these (along with other tinned meats) for the store-cupboard for the zombie apocalypse first lockdown -and keeping a well stocked pantry pending Brexit in January anyway. They don't have a huge amount of meat in them but it's inspired me to try to do a home made version of their pies.

I must go hunting for a good steak and kidney recipe.

You can get it in Picado. https://www.picadomexican.com/

It’s a brilliant recipe! We always eat in Wahaca when we’re in London so I make the little pork pibil tacos you get there with her pink pickled onions. It’s also really good with rice and freezes perfectly. Which given the amount you’ll be making is a good thing! :)

My two new recipes this week are keepers according to the jury.

Vietnamese pork bowls tasted amazing. Whoever said it smelled like feet when you add the nam pla earlier in the thread was wrong.

It smells worse than feet. :D

However, if you crank your extractor fan and your hob up as high as they go and hold your breath while stirring it, the smell soon cooks off and is gone entirely by the time you add the sugar. Keep cooking it on high until it's well caramelised. I served it with noodles, and had cherry tomato, spring onion, chilli slices, and coriander leaf as accompaniments.

The only fault is that I wanted more afterwards.

The steak and kidney pie was also exactly the ticket on a cold wintry night. It takes quite a while to slow-cook it off on the hob so the sauce thickens so I think next time I'll do it in bulk, freeze portions of the filling and then with frozen puff pastry it'll be a quick and easy freezer meal. I added a tablespoon of horseradish which really set it off.

Lots of freezer diving on the cards this week... somehow the chest freezer never seems to empty

  • Registered Users Posts: 181 ✭✭AustinLostin

    My week:

Monday: Glazed Sesame salmon will have it with rice and broccoli
    Tuesday: Courgette risotto
Wednesday: Halal cart chicken - the method of making the rice here ain't healthy but it is absolutely delicious
    Thursday: Bolognese from the freezer.

I ran out of steam when planning for the remainder of the week so see how it goes. Theres a frozen pizza and a bag of wedges in the freezer so likely how it will go on Friday.
