What to do for an hour on a track twice a week. Is there a way to get a program we can follow I can do out so we know what we'll be doing for x amount of weeks in a row?

Sounds a great idea, you should try talk to a coach in the local running club, maybe ask if you can attend one of their juvenile sessions to pick up ideas for your own group.
A session might look like:
Warm up lap
Introduction to drills
Strides, flying 30s/changing gears
