What does someone need to do to go from watching meat eater on Netflix to realising their own kill, clean, cook of a deer in Ireland ? Licenses, equipment, pricing , timeframe, etc.. how accessible is Deer hunting in Ireland ?

Depends on whether you want to shot one deer for the experience, or want to take up stalking yourself as a full time activity.Option 1 is a simple case of finding someone to bring you out (payment in pints), or paying one of the stalking providers to take you out for a stalk ( not sure if they will take out a complete novice, cheque book may work ).
Option 2, take it up as an activity yourself. Complete option 1, before you proceed. Best bet is to find someone near you to guide/advise you.( if you are located in deer country) . There are a couple of posts on here detailing exactly what you need, but allow for plenty of euros just for gear.
Your location in the country, will decide a lot.
