Driving our Ford Galaxy smax sat Eve turned on heater just cold air coming out.sunday morning checked and low to no coolant, so put a bottle of coolant in today..took car for drive it over heated a few times , stopped at a Ford garage I was passing. They looked and coolant v v low so they added two large jug fulls of water to the max level and told me to go back to mechanic who serviced it 5 weeks ago to do a pressure test.. took car for spin no drop in levels....just wondering would it be case of the coolant had gone so low that one bottle wasn't enough once car heated up or could there be leak....also I have it booked in for Fri afternoon if I take it for a spin over the next few days , if levels stay ok would I need to get it drained to get the right coolant/water mixed added.....v anxious bout this. Thks...

If level was that low you have a leak. What engine is it 1.8 tdci ??

If it doesn’t drop chances are cap wasn’t on tight, allowing coolant to boil off. (Cap allows pressure to build which increases the boiling point... of its not tight pressure won’t build)

When you filled it yourself, was it up to the max level?
Just keep an eye on it in the mornings, it may be nothing or it may be nothing.

Water is ok to use sometimes, but with the dropping temps you should get a good mix into the car.
If you don't know how to drain and fill fresh coolant then any mech should be able to do it while you wait for a small fee.
If you change it yourself remember to recycle the old coolant responsibly.
