Thinking of going north to buy a fiesta st, will all warranty work be covered by ford garages in the south?

Are you buying new?? You'll be liable for a HUGE VRT payment if you do.

That was the plan, would it make a massive difference if I went with a used model?

I think it needs to be 6 months old and/or over 6k miles to avoid the full vrt on a new car.

Car needs to be >6 months old and/or >6000 km on the clock otherwise it will be liable for vat here. Don't think the new Fiesta ST has been on sale for 6 months yet.
