What are the legal restrictions on living in a motorhome/campervan on a roadside on a temporary basis?

Not on a national route (includes motorways).

There may be safety, hygiene, etc, issues.

I wouldn't recommend the roadside. You will get people basting their horns & yelling at 2 am. Better to find a really quiet spot or do a deal with a farmer/campsite.

I found a campsite that needed some work doing. In return I got free parking, electricity, showers etc

Placing of any vehicle for human habitation on any land is a change of use; requires planning permission
