Door frame crooked

Hi. I bought a new house recently and we moved in about 2 months ago. I noticed that door frame in some of the rooms becomes crooked. Especially on top of the frames, some architraves on top have a gap between itself and the wall of 5-10mm.
Builder is saying that it can take up to two years for the house to dry and to settle, and door frames and the walls are expanding/drying. Yeah I understand that cracks on plasterboard are expected, but door frames... Is that normal?
We are keeping constant temp. at 20C. Builder advised that it's better to keep constant temperature to prevent too much cracks.

I call bull**** either wall or door frame is off plumb or else the architraves were never fixed to the walls on the outside edge.

The frames may not be fixed properly, walls not plumb, frames too wide for walls etc

Are the doors sticking

Are the walls in question stud or block
Is it a TF house?
