Apples, Hazel, plum, pear, damson, crabapple
    Rowan, pauls scarlet Hawthorn.

All low growing, mostly fruiting and flowering,

Broadleaves meaning you get winter sun and
Can prune back hard to shape and they'll regrow
    stronger than before

You said trees but another possibility is tall shrubs. A few mixed in with trees could brighten up the winter vista or give a nice mix in summer.

Spindle tree, Guelder Rose, Snowy Mespilus, Japanese Maple, Holly, Hazel, Smoke Bush, Dwarf Mountain Pine.
