We had fajitas, filled with stir-fried veg (leek, onions, peppers, mushrooms, sweetcorn) and kidney beans in a spicy sauce. Happy food. :)

Just had a rerun of the Loaves and Fishes here. We were just getting dinner ready when two unexpected guests arrived. We managed to stretch a couple of pieces of Salmon but, boy, was the deficit made up of vegetables!

We had a good laugh about it. Apple tart from the freezer is in the oven now, so I'm away again....

Put a bit of stewing steak in the slow cooker with red onions, garlic, and a good splash of soy sauce and balsamic, then added some butternut squash half way though.
Served with mash and peas, and it was delicious, stuffed now.

Oh, we are better hosts than that. :)
They don't deliver anywhere near this remote spot anyway. :(

We've the same issue, although there are 2 takeaways in town, but the freezer is your friend. I keep scone mix, cookie dough and portions of cold meats in the freezer for unexpected drop ins.

Working crazy hours with minimal breaks so I'm just home and wrecked and about to eat Snax and chocolate mice and milk teeth. Me so healthy. Not!

  • Registered Users, Registered Users 2 Posts: 2,923 ✭✭✭Bananaleaf

My weekends are not as well planned as my weekdays :)

    Breakfast: coffee 2xtoast with marmalade
Lunch: spelt pasta, chicken, spinach, cherry tomato and pesto and about 10 peanut m&ms
Dinner: M&S Indian - Chicken Korma, chicken pakora, sweet potato and onion bhaji, poppadoms with sauce

And soon I'll be having some of a raspberry and coconut sponge thingy that I got from m&s too.

I also had some lemon sponge cake. Mmmm. All the teeth are gone and the mice are effort so extra Snax for me.

Damn you €2 6-pack, I keep saying that I won't buy them but then hate handing over so much cash for a single bag of pretty much any kind or crisps so then I end up buying the offer pack and eating them all.
